I was invited to some friends for dinner and the theme was of couse christmas. I had to bring some goodies so I chose to make Berliner Pfannkuchen.

It was so much fun to make, and it was not difficult at all. And the taste of it was so delicious.

What to do:

Crumble the butter into the flour and add the organic-lemon zest, sugar and cardamom. Stir the yeast in lukewarm water and blend it with the flour, and with the egg and the yolk.



Stir the dough until there no longer is any chunks in it. Put an apron over the dough and let it rise for a couple of hours. The dough is now ready to be rolled out until it is approximately ½ cm thich. Form the dough into 4×5 cm pieces. Fill half of them with jam in the midle and brush them with water on the edge of the dough This makes it easier to get the two pieces to stick together. Put the “lid” over the jam-covered pieces and close them a the edge with a fork. Make very sure to close them probably, as otherwise the jam will burst out in the hot oil. Let the result rise for 15 minutes more and after that fry them in hot oil, until they get light brown (oil at about 180°C ). When they are done, roll them in sugar.

  • 300 gram wheat flour
  • 75 gram butter
  • 20 gram sugar
  • 30 gram yeast
  • 1 egg
  • 1 yolk
  • about 1,5 dl whole milk
  • grated shell of a lemon( organic)
  • 1 tsp cardamom
  • oil for deep-fry
  • Jam (strawberries or raspberries)
